De Mengsong à la cave sibérienne

Au printemps 2014, un petit jardin familial sur la montagne Mengsong — un lieu de hautes crêtes et de théiers anciens — a produit un lot de sheng qui a attiré mon attention. Les feuilles ont été cueillies sur des arbres à larges feuilles à environ 1800 mètres d’altitude, transformées avec une rigueur simple dans un atelier villageois, puis pressées en galettes de 357g. J’en ai acquis une douzaine dans le cadre d’un lot plus important destiné à ma cave en Bouriatie, où l’air froid et sec de la steppe russe ralentit la fermentation au ralenti. En dix ans, le thé a changé lentement : la jeune morsure verte s’est adoucie en une fine pointe minérale, et les arômes se sont approfondis sans jamais devenir rances. J’ai ouvert cette galette fin 2024 et découvert un thé qui raconte son voyage — vif comme un matin de printemps à Mengsong, mais traversé par la clarté austère d’un long hiver boréal. C’est un sheng qui récompense l’attention silencieuse, et un témoignage de l’importance du lieu, tant de la pousse des feuilles que de leur repos.

The leaf, brewed

Bright and mineral, with the quiet energy of a long northern winter.

Tightly compressed cake with intact, slightly glossy leaves; aroma of dried apricot, hay, and a faint hint of cold stone.

After rinse, leaves open to reveal a deep, even green-brown; scent shifts toward warm sandstone and dried meadow flowers.

Pale golden-amber, clear as a mountain stream, with a subtle oily sheen on the surface.

Clean and crisp — notes of wet slate, white peach, and a whisper of camphor emerge from the cup.

taste

Light-bodied and precise. A gentle mineral sweetness opens, framed by hints of apricot kernel, fresh hay, and a cooling eucalyptus-like lift on the mid-palate.

finish

A soft, lingering huigan rolls back across the tongue, leaving the mouth cool and clean, with a faint trace of dried pear.

Rincez deux fois si la galette est fortement compressée. Le thé récompense une température légèrement plus basse (90°C) lors des infusions suivantes pour faire ressortir la douceur des fruits à noyau.
