De los antiguos jardines de Mahei a tu taza

Amgalan Chin visitó por primera vez los jardines de crecimiento antiguo de Mahei en la primavera de 2019, guiado por un agricultor cuya familia ha cuidado estos árboles durante seis generaciones. La cosecha de 2024 llegó tras una primavera suave y seca que concentró los aceites aromáticos de la hoja. Permaneció en el pueblo durante toda la primera brotación, prensando el máo chá en bǐng de 357g con un molino de piedra traído de Jinghong. Cada pastel lleva un ligero aroma de las esteras de bambú utilizadas durante el secado al sol. Amgalan seleccionó únicamente la proporción de hojas gruesas y finas que sabe envejecerá con gracia — un equilibrio entre el encanto floral inmediato y la columna vertebral resinosa más profunda que emerge tras una década en su bodega. El té viajó hacia el norte por la antigua ruta del té ruso-mongola para llegar a nuestro almacén, un guiño a su propia herencia. Este pastel forma parte de un lote pequeño; cuando se acabe, el próximo prensado tendrá que esperar otra temporada de cooperación.
